Camera settings etc for city skyline at night please?

I will be in Sydney in February 2014 and will be staying in an apartment overlooking the harbour with uninterrupted fantastic views......North Sydney looking back at the Opera House, CBD and of course Sydney Harbour Bridge.
I want to make this opportunity count and would be grateful for any advice with regards to the best camera settings, JPEG v RAW etc., with particular reference to city skyline shots at night.
Also, if long exposures are involved, what considerations should be made at that stage if I want to stitch shots together to create a panorama in the post-processing stage.
