They are sometimes called Rainbow Beans, or Pearl Beans. Also related to the kidney beans. The peas are shelled, then boiled in soup with meat or bones. Subtle and sweet flavour, well liked food of children too. Rich in proteins, they are a good meat substitute for vegetarians.
