Textures in Illustrator

What's the best way to add textures in Illustrator for stock images so you have an editable vector file? I've used opacity masks, clipping masks etc. for jpg or print files but not for stock vector images. For example, say someone wants an apple with a 'grunge' texture and wants a final file as an editable vector/eps?

Vector files can't include bitmaps, so the only way is to post them just as jpg-s.
Canon 550D, Tamron AF 18-270mm, Canon 50mm, Wacom Intuos4 M,...

You have to fake it with shapes and gradients. You know.... drawing.
