Straight from gramma's recipe box, this dessert is so rich and tasty you'll be shaking your fist at me for all the weight you'll gain. Unfortunately I don't have a photo of this dish, which is just as well because it isn't very photogenic anyways, so I've borrowed some images from my fellow contributers to illustrate.
Cranberry Caramel Pudding
1 Cup Brown Sugar
2 Cups Hot Water
2 Tbsp. Butter
Simmer the above "sauce" on the stovetop for 10 minutes. You'll be pouring this over the batter, which goes like this:
1/2 Cup Sugar
1 Cup Flour
2 tsp. Baking Powder
1/2 tsp. salt
3/4 Cup Milk
1/2 Cup Cranberries
Turn the oven on to 350 degrees. Pour the batter into a casserole dish or other baking pan (makes no difference) and then pour the sauce over the top.
Now, at first you might wonder how on earth that thing will ever cook.
Pop in the oven and let it go. Don't be frightened if you peak in and see it bubbling up like a geyser or something.
Of course if it starts looking like this photo, you probably should start over.
You'll know it's done when it's brown on top and bubbled up. The sauce thickens as it bakes.
